My easy YUMMY salad

This is my favourite just-got-home-I'm-starving dinner!

Ingredients:

• Chicken breast (I used shredded roast)
• Baby spinach leaves
• Pumpkin
• Bacon (just a little adds the best flavour in this salad)
• Pine nuts
• Sprinkle of feta
• Cherry tomatoes (diced)

Method:

Start by finely slicing the pumpkin into little bits, you can roast it in the oven but I just chuck mine on the stove. Then do the bacon, I used a little coconut oil for both. Do this first as they take the longest to prepare..

Then prepare all the other ingredients in a big bowl and toss the bacon and pumpkin into it. To top it I use any balsamic dressing.. My favourite is by blessed & lucky it is delicious.. Otherwise any will do!

Thrive

If you have a 'Thrive' near you make it your next eating spot. They do a range of healthy eats and drinks and it's all so yummy! I always have their salted caramel smoothie (guilt free) and lamb burgers on zucchini fritters mm mm.. The beetroot and tzatziki dip goes a treat with it and amongst the bed of salad!

I'm gonna do a home version soon!
Go check them out or make your own these go so well together!

Overnight Oats

Ingredients: (this is just what I used today you don't have to stick to it!)

• Oats
• Berries (I used blackberries and raspberries)
• Greek yoghurt
• Almond milk
• Cinnamon

Method:

Grab a bowl/jar/contanier, and start layering these ingredients however you like! I put oats at the bottom so they soak up the wet ingredients (the milk or if you didn't use milk then the yoghurt) then layer the fruit between and on top I put my Greek yoghurt then sprinkled with berries and cinnamon!

You could also use nuts/coconut/chia seeds or just fruitl! Be creative.

Leave in fridge over night and breakfast is ready to go!

A berry-good breakfast.

The sun was shining this morning.. so I took advantage and ate my breakfast outside. On a Sunday I really can't be bothered to spend ages in the kitchen so I am going to have my favourite lazy breakfast.

Berries with greek yogurt and chia seeds.

My Ingredients!

  • Greek yogurt (I use Jalna or Farmers Union)
  • Blueberries and Raspberries (I get the big frozen packets from coles of berries and defrost them as I go!)
  • Chia seeds!

Facts!

Blueberries and Raspberries:
Berries taste like a treat to me so it makes me feel guilt free to know that berries are one of our fruits lowest in natural sugar.. plus the blueberry is one of our power foods!

Chia Seeds:
I sprinkle chia seeds on almost everything I eat in the morning.. they don't have a taste so you won't ruin the flavour of your meal don't worry! They don't seem like much but they are filled with goodness and they keep you fuller longer! These little seeds are packed with loads of protein, calcium and omega-3! Along with loads of other benefits!
